Baking with Amy Gingerbread Cookies

This recipe creates a flavorful authentic gingerbread cookie perfect for creating Gingerbread Men, Gingerbread Houses and other special holiday cookies.

 

 Baking with Amy

I love baking these delicious cookies, it creates the most wonderful smell all throughout the house!

And it is always so much fun decorating these excellent cookies!

 

Ingredients:

5 1/2 cups sifted all purpose flour

2 teaspoons baking soda

2 1/2 teaspoons Kosher salt

2 large eggs (room temperature)

2 tablespoons finely minced fresh ginger

3 teaspoons ground cinnamon

2 teaspoons ground cloves

3 teaspoons freshly grated nutmeg

2 sticks =(1 cup) room temperature unsalted butter

1 tablespoon pure vanilla extract

1 cup packed brown sugar

1 1/2 cup dark  molasses

 

 Instructions:

  1. Sift together flour,baking soda salt, and spices in a medium bowl.

  2. Beat butter and sugar with a mixer on medium-high speed until fluffy. Add eggs, beating well until creamy and smooth. Stop the mixer and gradually begin to  add the flour mixture, and molasses and beat until just combined. Divide dough into 2 portions, and wrap each in plastic. Refrigerate for approximately one hour until firm.

  3. Preheat oven to 350 degrees. On a generously floured pastry board, roll dough to approximately 1/4 inch thick. Brush off any excess flour. 

  4. Cut out desired shapes. Carefully transfer the cut cookie dough onto a baking tray that has been lined with a nonstick baking mat or parchment paper and freeze for 15 minutes.

  5. Bake cookies for  approximately 12 minutes. rotate the  sheets after 6 minutes, and bake until crisp but not darkened. Let cool on sheets on wire racks

  6.  Begin to decorate after the cookies have cooled completely

Sugar and Spice

 The Essentials:

 finely minced ginger

 

packed brown sugar/ fresh nutmeg

Nutmeg

After cutting the cookies place in the freezer for at least 15 min before baking

 

Gingerbread Cookies

 

Bake in a 350 degree oven for approximately 10-12 minutes.

Oven time

  Allow the cookies to cool completely 

 

Decorating

Now begins the fun!

  • Hi Amy. I just wanted to say that your photos of your bakes are a feast for the eyes! I have only recently heard about you and your husband’s experience on a reality television program and I think it was terrible what happened as a result. I believe it to be a horrendous case of public shaming and cyber bullying that should not be tolerated. I am disappointed to hear that instead of a public plea by the show to discourage the behaviour that they capitalized on it. I wish you success with your book.

  • I can see that you put you’re whole hearth into baking,the things you make are creative and do really look good. I dislike the negative publicity you two got,somehow its best to close that window to the past and start anew.
    And you two really are good people,try to stay positive and fuck that past with the media.

    Listen.. I saw everything but I really thought about it.. You have such a strong passion for cooking! I could tell and feel it by watching you. I understand how you must of felt when people were displeased by some of the food. It would hurt me too :( but I wish I could of came to your bakery and tried one of your amazing looking sweets!!
    I wish I could of talked to you over eating cake and tell you how I feel now.. I would of said "Amy, you’re an amazing pastry chef! Why? Gordon Ramesy himself said “its lovely” I know you hate him but that’s HUGE :) it really is. And they look so beautiful and professional Amy! So people don’t like your “meal” cooking, so screw it! Focus on what they do like, and that you’re clearly AMAZING at! ♥ :) just be a bakery that serves BOMB sweets!! You have a passion and obviously talent~ so do what you love and build on what you’re great at!" :)
